The Perfect Summer Orzo Salad
This warm weather [minus last nights snow storm] has given me the "pasta salad" itch.... anyone else feel me?! I wanted to pop in quickly and share one of my favorite// go-to salads. Once again, easy to make and oh so nummy. It usually lasts about a week in the fridge, but lets be honest, it never lasts that long in there between Steve and I ;)
Last night we paired it with our delicious Wild Tree meal. I attended a party last week and stocked up on 10 freezer meals for the grill. The first one we tried was a complete success! I can't wait to share more about the meals I made and how awesome the party was.
Now I'm off to finalize all the new items coming into the blog shop this week [Keep your eyes open!]
For the Dressing:
1/3 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon minced shallots
2 teaspoons Dijon mustard [I usually use yellow]
2 teaspoons honey
sea salt and fresh cracked black pepper to taste
For the Pasta Salad:
5 cups cooked orzo pasta
2 cups de-seeded and coarsely chopped English Cucumbers
2 cups halved cherry tomatoes
1 heaping cup crumbled feta cheese
1/2 cup thinly sliced purple onion [I usually leave this out.... hubby HATES them]
1/3 cup chopped fresh basil [I use dried a lot too!]
