I won’t lie… life with three kids makes meal times crazy! I have always been a “keep it simple” type for meals. I try to keep it to a meat, vegetable and one side dish [ usually a carb ;) ]. However, I find myself these days getting all these groceries [Thank you Wally World grocery pick up!] and not using half of them because I resort to eating out or frozen meals. I am over it now, and ready to get back in my cooking groove!
I sat down and meal planned for the rest of this week and the next, so fingers crossed I can stay strong and follow through. One meal I wanted to share were these burger muffins! Anyone else obsessed with these cooking videos all over Facebook? I saw these on there during a wonderful 1 am feed and had to save it. We are burger lovers over here and these get a two thumbs up!

½ Lb Ground Beef
1 Small Onion
2 ½ C Flour
1 Tb Sugar ( I did not add this)
2 Tsp Baking Powder
1 Tsp Salt
¾ C Ketchup
¾ C Milk
2 Large Eggs
1 Tsp Prepared Mustard
½ C Melted Butter
2 Cups Shredded Cheese
Preheat oven to 400 Degrees
1// Brown beef & onion, drain and set aside
2// Combine all dry ingredients in one bowl and wet in another. Mix them up well!
3// Fold the wet ingredients into the dry. Then add meat/onion mix & shredded cheese.
4// Grease a muffin pan and add mixture about ¾ the way up.
5// Bake for 14 minutes & enjoy!
